California Sun Dried Bing Cherries
The bing cherries are washed, de-stemmed and pitted, then carefully laid on wood drying trays, sulfured (for color retention and as a preservative), and laid in the California sun to dry. The cherries are removed from the trays, rewashed, sorted, packaged, and stored. The cherries used are grown locally in the California San Joaquin Valley and the sun drying process locks in the intense fruit flavors.
